BiE Wild Cider 1 Alessandro Viola and age-worthy whiteYear: 2023Alcohol: 12%Vinification:Crafted from apples harvested from our organic high stem orchard, this cider undergoes a natural (wild) fermentation with no added sulfites. Bottled in July 2023 after a month of initial fermentation and 9 months of aging on the lees. At bottling, we added 8g L of sugar to initiate a secondary fermentation in the bottle, creating fine bubbles. For this bottle fermentation, we rely on natural yeasts, with no commercial yeasts introduced.
