原料は全て国内産のものを使用。苦みの元となる頭と腹わたを取り除いて、蒸したあと天日干しすることで風味を出しています。また、魚の生臭さの無い削り節を作る為に、脂の少ない煮干しのみを1本ずつ目視で選別しています。
